This coffee comes from small farms around Santa María de Dota, a bowl-shaped valley hidden in the Tarrazu mountains. Cherries are depulped the day they are picked, fermented in tanks for 18–24 hours, washed in mountain water, and dried in the sun. The valley’s unique soils give the coffee its famous stone-fruit character.
