Papua New Guinea - Simbu - Chuave - Specialty Coffee Beans

Varietal: Typica, Bourbon

Fully washed

Dry-fermentation 24 h

River-washed

Dried on tarpaulin “sails,” sun-dried

🌸 Tasting Notes:

Pink grapefruit, papaya, treacle, jasmine tea

—–

🍯 While the coffee is hot, treacle leads a deep pleasant sweet bitterness.

🍊 With the second sip, pink grapefruit opens up bright, juicy citrus acidity that lifts the whole cup.

🥭 As it develops, papaya rolls in; soft, tropical sweetness rounding out the citrus edge.

🍵  Jasmine tea is always present in the background; a quiet floral tea thread, from the first aroma to the last sip.

This coffee comes from small garden plots around Chuave, in the Simbu highlands of Papua New Guinea. Farmers hand-pulp the cherries on their own farms, ferment them for 24 hours in wooden boxes, wash them in river water, and dry them on tarpaulin sheets.

Process: Washed (dry-fermented 24 h, river-washed)

Altitude: 1500 – 1850 masl
